Almond Pesto

Almond Pesto

Ingredients

  • 1/2 cup almonds (toasted)
  • 6 cloves garlic
  • 1 1/2 cups fresh basil leaves
  • 1 cup olive oil
  • 1 tsp ground nutmeg
  • 1 tsp salt and then add pepper to taste

Directions

  1. In a saute pan saute almonds until they are toasted (you do not need oil, just put the almonds in the pan and let the pan warm up then keep them moving so they don't burn.)
  2. In a food processor, combine toasted almonds, garlic, basil, olive oil, nutmeg, salt and pepper. Process until a coarse paste is formed.
