Cilantro Lime Rice

1T olive oil
1c basmati rice- (you can use jasmine, but basmati does not stick together at all so it is not gummy in texture)
1.5 c chicken broth
2-3 cloves garlic-minced
2T lime juice
zest from 1 lime
1/2 c cilantro, chopped
1t salt

Chop cilantro into fine pieces.  Bring water to a boil with bouillon in it.  You can fry the rice first in olive oil, but I don't.  Add the rice, lime juice, and garlic into the broth.  Cook for 15 minutes then add in cilantro and lime zest... you may want more or less lime flavor, so start with less zest and make sure you want more before adding in all the zest.
