Our 100% healthy whole wheat bread



We just got our wheat grinder (thanks to not going out to eat the past two weeks and our spending money for the past couple months!) So we have done it, and we are loving it! We had to remake Grammie Gege's amazing bread. We made a few substitutions (like applesauce and honey) and boy oh boy are we loving the results.

Each batch produces 4, (8 x 4-inch) standard size loaves.
  • 2/3 cup applesauce or oil
  • 2/3 cup honey, or 1 cup sugar
  • 1 1/2 Tbsp. salt
  • 5 1/2 cups steaming hot water (120-130F)
  • 1/2 cup gluten flour
  • 3 Tbsp. dough enhancer
  • 2 1/2 Tsp. Instant yeast
  • 14-16 cups whole wheat flour
Mix together first four ingredients in mixer with a dough hook. Check the temp of your water and add the yeast. Add 1/2 of the flour and beat. Put in 1-2 more cups of flour, gluten flour, dough enhancer. Beat again. With mixer on medium speed, add remaining flour just until dough pulls away from the sides of the bowl. Knead 6-10 minutes on medium speed. With wheat bread, always add the least amount of flour possible to keep bread moist.

Pre-heat oven for 1 minute to LUKE WARM and turn off. Spray or oil pans. Pour dough out onto oiled counter (or if you are skilled skip this step.), divide and shape into loaves and put into pans Let loaves rise 35 minutes in warmed oven. Do not remove bread from oven; turn oven to 350 F. and bake for 30 minutes. Tip out of pans and cool on cooling rack.
